Crock Pot Pesto Chicken Wraps



I just love pesto. It's really versatile and I use it in a lot of different recipes like these Crock Pot Pesto Chicken Wraps. They are so good and packed with flavor. A great healthy and delicious meal!


Crock Pot Pesto Chicken Wraps
Makes 4 Wraps
WW PP=9
Cal 355, Carbs 27.2, Fat 16.2, Fiber 14, Protein 36

Ingredients
16 oz. boneless skinless chicken tenderloins
1/3 cup pesto sauce
1 can Italian diced tomatoes, drained
1 cup shredded mozzarella cheese
2 cups fresh baby spinach
4 large whole wheat wraps (I used La Tortilla Factory High Fiber Wraps)


Arrange chicken in bottom of crock pot. Pour pesto over chicken along with diced tomatoes. Cover and cook on low 4 hours. Break chicken into pieces.

To assemble wraps-evenly divide chicken into four servings. Spoon chicken onto tortilla. Sprinkle with 1/4 cup shredded mozzarella and 1/2 cup baby spinach. Roll up seam side down. Cut in half and enjoy!

Creamy Bacon Buffalo Mac and Cheese



Another family favorite this Creamy Bacon Buffalo Mac and Cheese is the perfect combination of cheese and spice. It's been a while since I've made this dish so I couldn't wait to have it for dinner. It was delish!


Creamy Bacon Buffalo Mac and Cheese
Serves 6
WW PP=6
Cal 250, Fat 7.1g, Carbs 30.6, Fiber 4g, Protein 16.6g

Ingredients
8oz elbow macaroni (I used Ronzoni)
1/2 cup buffalo wing sauce (I love Franks)
1/2 cup cooked and crumbled bacon (I used bacon bits)
1/4 cup ranch dressing (I used Light)
4 oz light cream cheese (I used fat free)
1/2 cup milk
1 cup shredded cheddar jack cheese, divided (I used reduced fat)


Cook pasta to al dente, then drain.

Meanwhile, in a large saucepan melt cream cheese, milk, and ranch dressing. Whisk until smooth. Slowly add in the wing sauce, and shredded cheese. Once melted stir in bacon and pour mixture over hot cooked pasta. Once combined spoon into bowls and top with sliced green onion and crumbled blue cheese if desired. Enjoy!

Skillet Jambalaya



I'm all about the skillets lately! Its great for busy weeknights when I don't feel like spending all my time cooking. I can't even remember the last time I had Jambalaya, but both my husband and I love it. Toss in your favorite meat and veggies and you've got a hearty and delicious meal!

Skillet Jambalaya
Serves 6
WW PP=6
Cal 239, Carbs 32.8, Fat 6.5, Fiber 1, Protein 11.8


Ingredients
1 tbsp. olive oil
1 clove garlic, minced
14 oz. cajun chicken smoked sausage, cut into slices
1 can petite diced tomatoes, undrained
1 cup chicken broth
1 medium green pepper, diced
1 medium onion, diced
1-1/2 cups uncooked instant rice
1 tbsp. Cajun seasoning


Heat olive oil in a large skillet, cook veggies until soft. Add the garlic, sausage, tomatoes, and broth. Bring to a boil. Stir in the rice and cajun seasoning. Remove from heat; cover and let stand for 5 minutes. Enjoy!

Chipotle Lime Steak Burrito Bowls




One thing is for sure.....I'm obsessed with Chipotle. Not that I'm comparing this delicious recipe to Chipotle but its pretty darn close. Minus the cilantro rice and you can indulge without the guilt since my version is low in fat and calories. It's a family favorite in my house!

Chipotle Lime Steak Burrito Bowls
Serves 4
WW PP=12
Cal 477, Carbs 43.7, Fat 16.2, Fiber 5, Protein 38.2


Ingredients
1-2lb Marinated Skirt Steak, Trimmed (I think Flank steak would work well too)
2 Chipotle Peppers in adobo, chopped
Juice of one lime
4 Cups Cooked Brown Rice
1 Cup Black Beans
1 Cup Reduced Fat Shredded Cheese (We Used Monterrey Jack)
Any additional toppings of your choice ( Lettuce, Chopped Tomato, Sour Cream, Cilantro,Red or Green Onion)


Whisk together lime juice and chipotle peppers. Pour over steak. Place steak in ziploc bag and refrigerate for at least 1-2 hours.

Grill steak 5 minutes per side or until desired doneness (we like medium rare) Slice steak and assemble your burrito bowls with the steak, rice, black beans, and additional toppings of your choice.  Enjoy!

Crock Pot Buffalo Chicken Corn Chowder



I'm in total soup mode lately and I am always looking for new ways to prepare the tasty stuff! I love chowders and I find that they are a bit heartier than traditional soups which makes it the perfect dinner. Well, let me tell you....this Buffalo Chicken Corn Chowder hit the spot! It was fantastic!

Crock Pot Buffalo Chicken Corn Chowder
Serves 6
WW PP=6
Cal 227, Carbs 29.5, Fat 3.6, Fiber 1, Protein 19.3


Ingredients
2 large boneless skinless chicken breasts (mine were about 5oz each)
1 small onion, chopped
1 tsp. garlic powder
4 cups fat free chicken broth
1/2 cup milk (I used 2 percent)
4 cups diced potatoes (I used simply potatoes)
1 can creamed corn
1/2 cup crumbled bacon or bacon bits
1/3 cup reduced fat shredded cheddar cheese
1/3 cup buffalo wing sauce ( you can use more or less depending on how spicy you'd like it)
Crumbled Blue Cheese and Green Onions, if desired

Arrange chicken in bottom of crock pot. Season with garlic powder. Add in the potatoes, corn, onion, chicken broth, and buffalo wing sauce.  Cover and cook on low 6-8 hours. About 30 minutes before serving break chicken into pieces. Add in the milk, cheese, and bacon. 

Ladle into bowls and garnish with crumbled blue cheese. Enjoy!

Are you looking for something simple, yet delicious, with a touch of spice, for dinner? Then I have the meal for you! These Crock Pot Caribbean Jerk Chicken Bowls are so easy to prepare and incredibly good! A mix of sweet and spicy chicken served over a bowl of fluffy rice. They were an instant hit!

Crock Pot Caribbean Jerk Chicken Bowls
Serves 4 (One serving chicken +one cup brown rice)

Cal 398, Carbs 57, Fat 6.5, Fiber 2, Protein 29.5

Ingredients
16 oz. boneless skinless chicken
3/4 cup Caribbean Jerk Marinade (I used Lawrys)
1 cup pineapple tidbits
1 cup reduced fat cheddar jack cheese
4 green onions, sliced
4 cups cooked brown rice

Arrange chicken in bottom of crock pot. Pour in marinade. Cover and cook on low 3-4 hours. Break up chicken and add in pineapple. Continue cooking another 30 minutes. Spoon chicken over one cup rice and top with sliced green onions. Enjoy!

BBQ Chicken Skillet Pasta




I've been wanting to make BBQ Chicken for a while now but have not been in the mood to go outside and grill. So, instead of grilling I decided on this BBQ Chicken Skillet Pasta. It combines all my favorites in one tasty skillet. The perfect meal for busy weeknights!

BBQ Chicken Skillet Pasta
Serves 6

Cal 345, Carbs 52, Fat 5.1, Fiber 6, Protein 23.3

Ingredients
1 12 oz box short pasta of your choice (I used Ronzoni Spirals)
2 cups cooked chicken breast, chopped
1/3 cup BBQ Sauce
1 can petite diced tomatoes, undrained
1 cup reduced fat shredded cheddar jack cheese
6 slices center cut bacon cooked crisp
2 green onions, sliced


Cook pasta to al dente. Drain and set aside

Meanwhile in a large skillet combine chicken, bbq sauce, and tomatoes. Bring to a simmer. Toss in cooked pasta. Sprinkle with cheese. Cover and cook on low 3-4 minutes or until cheese is melted. Top with chopped bacon and green onions. Enjoy!

Cheesy Buffalo Ranch Club Chicken





What a great combination. Buffalo Sauce, Ranch, Cheddar Jack Cheese, and Bacon. It doesn't get better than that! (Or at least in my opinion) Another easy weeknight recipe. Ready in under 30 minutes!


Cheesy Buffalo Ranch Club Chicken
Serves 4

Cal 261, Carbs 10.3, Fat 10, Protein 33.3

Ingredients
16 oz. boneless skinless chicken
1/2 cup panko breadcrumbs
1/4 cup buffalo sauce
1/8 cup ranch 
1/3 cup crumbled bacon bits
1/3 cup reduced fat shredded cheddar jack cheese


Pre-Heat Oven to 400

In a mixing bowl combine ranch and buffalo sauce. In another bowl combine panko, bacon bits, and shredded cheese.

Take each chicken breast and dip into the buffalo ranch mixture and then into the breadcrumb mixture. 

Place on a baking sheet and bake for 20-25 minutes or until juices run clear. Enjoy!

Creamy Crock Pot Taco Soup



It's definitely feeling like fall around here lately and there is nothing I like more on a cold day than a nice hearty bowl of soup. Given my Taco obsession it's no surprise that I decided on this Creamy Crock Pot Taco Soup. It's so easy to prepare and your crock pot does the rest. I served mine alongside corn bread and it was delicious!

Creamy Crock Pot Taco Soup
Serves 6

Cal 217, Carbs 11.5, Fat 9.5, Fiber 1, Protein 19.5

Ingredients
16 oz. lean ground beef, cooked and drained
2 tbsp. taco seasoning
4 cups beef broth
1 can rotel, undrained
1 cup pinto beans, drained
1/2 cup salsa
4 oz. reduced fat cream cheese

Season ground beef with taco seasoning and transfer to crock pot. Add in remaining ingredients. Cover and cook on low for 6 hours. Ladle into bowls and top with any additional toppings of your choice. Enjoy!

Taco Stacks


Yes, another Taco recipe! I'm obsessed with Tacos and have to have them at least once a week! These Taco Stacks are an easy meal to whip together and a fun change from traditional tacos. Add whatever toppings you'd like and enjoy!

Taco Stacks
Serves 4
WW PP= 8 (4 oz. meat and  3 tostada shells)
Cal 330, Fat 9g, Carbs 30.7, Fiber 1g, Protein 21.7g

Ingredients
16 oz. lean ground beef (I used lean ground turkey)
2 tbsp. taco seasoning
1/2 cup water
3/4 cup salsa
1 cup refried black beans
1 cup reduced fat cheddar jack cheese
12 Tostada Shells
lettuce, cilantro, sour cream, tomatoes etc. for toppings

Brown meat in a large skillet over medium high heat. Drain and add in the taco seasoning, water, and salsa. Let simmer 10 minutes.

To assemble taco stacks: Evenly spread black beans over each tortilla and then layer meat mixture on top of each tostada shell forming stacks. Sprinkle cheese over each one. Garnish with any other toppings of your choice. Enjoy!

Jalapeno Popper Mini Pizzas



Gah...I've been in quite the recipe rut lately. Every so often I just start drawing a blank and can't think of any new recipes to prepare. I guess as a food blogger, it comes with the territory. Especially when I am blogging 5 days a week! My family loves English Muffin Pizzas and my husband loves Jalapeno Poppers so I thought I would combine the two to create a tasty mini pizza. It was a hit and a fun spin on a popular classic!

Jalapeno Popper Mini Pizzas
Makes 12 Pizzas
WW PP=4
Cal 162, Carbs 25.9, Fat 3.1, Fiber 1, Protein 8.8

Ingredients
2 cups cooked chopped chicken
1/8 cup crumbled bacon bits
1 tsp. garlic powder
1 tbsp. grated parmesan cheese
1/2 cup reduced fat cheddar cheese
3 oz reduced fat cream cheese,softened
1/3 cup chopped jalapenos (I used pickled Jalapenos)

Heat oven to 375°F.

While oven is pre-heating combine chicken, cream cheese, Parmesan cheese, jalapenos, and garlic powder.

Evenly spread mixture onto each english muffin half. Sprinkle cheddar cheese over top.

Bake for 20 minutes or until heated through and cheese is melted. Enjoy!

White Cheddar Shells with Broccoli and Ham



Another family favorite, I used to make this recipe ALL the time back in my single days. It was an easy recipe but oh so comforting. I've made some changes over the year to make it healthier and ww friendly but it is still delicious and a great way to get your kiddos to eat their veggies!

White Cheddar Shells with Broccoli and Ham
Serves 6
WW PP=7
Cal 239, Carbs 32, Fat 8.1, Fiber 2.2, Protein 17.8

Ingredients
12 oz. shell pasta cooked to al dente
2 cups chopped broccoli
1 cup chopped ham
1 1/2 cups shredded white cheddar cheese (I used cabot reduced fat)
2 oz. reduced fat cream cheese
1 cup fat free milk
1 tsp garlic powder
1/2 tsp salt

In a large skillet stir together milk and cream cheese and bring to a light boil over medium heat. Add in the salt and garlic powder and stir for 5 minutes, or until thick and bubbly. Slowly whisk in half of the cheese. Once melted, stir in the cooked pasta, ham, and broccoli. Add remaining cheese, cover and turn heat to low. Cook for another 5 minutes or until cheese is melted. Enjoy!

Parmesan Garlic Baked Chicken



I love the combination of Parmesan and Garlic, especially on chicken. It's so good. If you are looking for an easy weeknight meal then you have to make this Parmesan Garlic Baked Chicken. Super simple and ready in 30 minutes!

Parmesan Garlic Baked Chicken
Serves 4
WW PP=4
Cal 180, Carbs 10, Fat 4, Protein 27

Ingredients
4 boneless skinless chicken breasts
1 tbsp. garlic powder
1/2 cup bread crumbs
1/2 cup Parmesan cheese
2 tsp. dry Italian seasoning mix

Pre-Heat oven to 400.

In a small bowl combine dry ingredients.

Dip each chicken breast in breadcrumb mixture and place on a foil lined baking sheet.

Fire Roasted Tomato Baked Penne




I love making baked pasta dishes. Especially in the fall. There is something so comforting about a cheesy baked pasta dish. Yummo! I also love Fire Roasted Tomatoes in pasta recipes. The flavor is amazing! I made this dish using a meat sauce, but it also tastes great without. You've got to try it for yourself!


Fire Roasted Tomato Bake Penne
Serves 8
WW PP=8
Cal 326, Carbs 40.5, Fat 8.6, Fiber 3.7, Protien 22.1

Ingredients
12 oz. penne pasta, cooked to al dente (I used Ronzoni)
1 lb. lean ground beef
2 tbsp. dry Italian seasoning blend
1 tsp. garlic powder
1.5 cups marinara sauce
1 can fire roasted diced tomatoes, drained
1.25 cups shredded Italian cheese blend

Brown ground beef in a large skillet over medium high heat. Drain and add in the garlic powder, Italian seasoning, marinara sauce and fire roasted tomatoes. Bring to a simmer. 

While mixture is simmering arrange noodles in a casserole dish. Pour meat mixture over pasta. Combine well. Sprinkle cheese over top.

Bake at 375 for 20 minutes or until heated through and cheese is melted. Enjoy!

BBQ Bacon Cheeseburger Mini Meatloaves



We very rarely have meatloaf in our house. It's not that I don't like it, but I just never think to make it. My husband absolutely loves it so I decided I'd make one of his favorites today. There is not much not to like about these tasty little BBQ Bacon Cheeseburger Mini Meatloaves!


BBQ Bacon Cheeseburger Mini Meatloaves
Makes 8 Meatloaves
WW PP=5
Cal 201, Carbs 8.5, Fat 9, Fiber .5, Protein 19.5

Ingredients
1.5 lbs lean ground beef or ground turkey
1/2 cup bacon bits
1 cup reduced fat cheddar cheese
1 egg, lightly beaten
1/4 cup bread crumbs (I used panko)
1 tablespoon Worcestershire sauce
1 tablespoon burger seasoning blend (I like McCormick)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup bbq sauce

Preheat oven to 375 degrees.

In a large bowl, combine the beef, bacon, cheese, egg, Worcestershire, burger seasoning, salt, and pepper. Mix until combined.

Stir 1/4 cup BBQ sauce into meat mixture, set remaining sauce aside.

Separate meat mixture so you have enough to put in 8 greased muffin tins.  Spread remaining BBQ sauce over each meatloaf.

Bake for 35-40 minutes or until no longer pink. Enjoy!

Crunchy Baked Buffalo Chicken Tacos



Nothing like combining two of my absolute favorites (buffalo chicken and tacos) to create an incredible dinner! I've made Buffalo Chicken Tacos before but adding a layer of cheese and baking until bubbling created an extra layer of flavor! You have got to try them for yourself and see how delicious they are!


Crunchy Baked Buffalo Chicken Tacos
Makes 10 Tacos
WW PP=3 Per Taco
Cal 135, Carbs 8.5, Fat 6.3, Fiber 1, Protein 10

Ingredients
3 cups cooked and shredded chicken breasts
2 tsp. garlic powder
2 oz. reduced fat cream cheese, softened
1/2 cup buffalo wing sauce (I love Franks)
1 cup reduced fat shredded cheddar jack cheese
10 hard shell tacos
sliced green onions
crumbled blue cheese, optional

Pre-Heat oven to 375.

In a large bowl combine chicken, cream cheese, garlic powder, and wing sauce together.

In a 13x9 casserole dish spoon chicken mixture into hard shell tacos. Sprinkle cheese over top. Bake for 15-20 minutes or until cheese is melted and heated though.

Garnish with green onion and blue cheese, if desired. Enjoy!

Creamy Tuscan Ravioli




This has got to be one of the easiest pasta recipes I have ever made. Great for a busy weeknight when you don't have a lot of time to spend in the kitchen!

Creamy Tuscan Ravioli
Serves 6
WW PP=9
Cal 390, Carbs 47, Fat 9.2, Fiber 2, Protein 14

Ingredients
6 cups refrigerated ravioli (I used Buttoni mini ravioli)
1 tomato chopped
1 tsp. garlic powder
1.5 cups Sun Dried Tomato Alfredo Sauce (I used Classico)
1/4 cup grated Parmesan cheese
Fresh chopped parsely for garnish

Cook pasta according to package directions. Meanwhile heat the sauce in a small saucepan over medium high heat add in garlic powder and chopped tomatoes. Let simmer for about 3 minutes. Spoon over hot cooked ravioli. Sprinkle with Parmesan cheese and pasta. Enjoy!
