Crock Pot Honey Garlic Sticky Chicken




This is a chicken dish that is sweet (but not too sweet) yet also savory. I'm telling ya, this chicken is addicting! I like to serve it over a bed of brown rice but it would also make a great filling for sandwiches too. The flavors in this dish are incredible! Easy to prepare and the crock pot does all the rest!

Crock Pot Honey Garlic Sticky Chicken
Serves 6

Cal 198, Carbs 9.6, Fat 9, Protein 21.6


Ingredients
2 lbs boneless skinless chicken thighs (I'm not a huge dark meat fan but you've got have it in this dish-although chicken breasts are okay too)
1/8 cup honey
3 garlic cloves, chopped
1/8 cup brown sugar
2 tbsp. soy sauce
2 tbsp, apple cider vinegar
1 tsp. salt
1/2 tsp. red pepper flakes
1 tbsp. cornstarch
2 tbsp. water, divided

Arrange chicken in bottom of crock pot. Season with salt.

In a small bowl whisk together honey, garlic, brown sugar, red pepper flakes, 1 tbsp. water, and soy sauce. Pour over chicken. Cover and cook on low 4-5 hours hours.

Remove chicken from crock pot and take remaining juices and pour into a sauce pan. Combine cornstarch and water and add to sauce. Heat until thickened.

Serve chicken over rice and drizzle sauce over the top. Enjoy!

Greek Style Chicken Wraps



When I think of Wraps I think of a lighter, yet, satisfying dinner. When my husband thinks of Wraps he thinks of lunch and doesn't think they are hearty enough for dinner. Well, these Greek Style Chicken Wraps are super filling, yet healthy, and make the perfect dinner!

Greek Style Chicken Wraps
Makes 4 Wraps
WW PP=8
Cal 280, Carbs 22, Fat 11.2, Fiber 12, Protein 37

Ingredients
2 cups cooked chicken breast, chopped
2 tbsp. lemon pepper seasoning blend (I used Mrs. Dash)
1/2 cup tzatki sauce (I used Oikos Cucumber and Dill Yogurt Dip)
1 cup feta cheese crumbles
2 plum tomatoes, sliced
1/2 cup greek style pepperocini peppers, chopped
4 whole wheat flour tortillas (I used high fiber low carb)

Season cooked chicken with lemon pepper seasoning.

To assemble wraps add 1/2 cup chicken to each tortilla. Top with 2 tbsp. tzatki sauce, 1/4 cup feta cheese, 3 slices tomato, and two tablespoons chopped pepperocini peppers. Roll up tortilla seam side down, slice in half and enjoy!

Baked Spaghetti





Ahhh.....another tasty classic. I love Baked Spaghetti even more so than Lasagna. It's simple to prepare and works great as a freezer meal too. Hearty and delicious!


Baked Spaghetti
Serves 8
WW PP=9
Cal 342, Carbs 38, Fat 11.2, Fiber 3, Protein 23.8

Ingredients
12 oz. spaghetti (I used ronzoni smart taste)
1 lb. lean ground beef (I used 93/7)
1 jar pasta sauce
1 tbsp Italian seasoning
1 tsp. garlic powder
1 tsp. onion powder
1 cup reduced fat shredded mozzarella cheese, divided
1 cup reduced fat shredded cheddar cheese, divided
1/4 cup grated parmesan cheese

Cook Pasta to al dente. Drain and set aside.

Meanwhile brown ground beef. Add in the Italian seasoning, garlic powder, onion powder, and pasta sauce. Reduce heat to low and simmer five minutes.

While meat is simmering, toss pasta with parmesan cheese and half of the cheddar and mozzarella and spread into a lightly sprayed 9x13 baking dish. Top with meat sauce and remaining cheeses.

Bake uncovered at 375 for 20-25 minutes or until casserole is bubbly and cheese is melted. Enjoy!

Creamy Baked Tacos





You might be thinking...another taco recipe? Well, it's no surprise that Tacos are a favorite in our house. I could eat them at least 3 times a week! The difference between these tacos and the traditional is that they are made with cream cheese and and baked so the you have a crispy outside but the inside of the taco is filled with creamy cheesy goodness!


Creamy Baked Tacos
Makes 12 Tacos
WW PP=4 (Per Taco)
Cal 146, Carbs 8.9, Fat 7.1, Fiber 1, Protein 10.5

Ingredients
16 oz. lean ground beef (I used 93/7)
2 oz. reduced fat cream cheese
1/8 cup reduced fat sour cream
1 can rotel, drained
2 tbsp. taco seasoning
3/4 cup reduced fat cheddar jack cheese
12 hard shell tacos
shredded lettuce, sour cream. tomatoes etc for toppings


Pre-Heat oven to 375

Brown ground beef over medium high heat. Drain and add in the taco seasoning, cream cheese, sour cream, and rotel. Once melted spoon into taco shells and sprinkle with cheese. Place in a baking dish and bake for 15-20 minutes or until cheese is melted. Enjoy!

Creamy Buffalo Chicken Potato Bake




Creamy, cheesy, spicy, smoky, goodness piled into one tasty casserole! This was a hit with the hubster and it's low cal/low fat so you can enjoy it without feeling guilty!


Creamy Buffalo Chicken Potato Bake
Serves 6
WW PP=7
Cal 260, Carbs 22.6, Fat 9.1, Fiber 1, Protein 21.3

Ingredients
3 cups cooked chicken, cubed
4 cups southern style hash brown potatoes
4 oz. reduced fat cream cheese
1/2 cup milk
1/3 cup crumbled bacon bits
1/3 cup buffalo wing sauce
1 tsp. garlic powder
1 tsp. salt
1/2 cup reduced fat cheddar jack cheese
1/2 cup panko breadcrumbs
2 green onions, sliced

Pre-Heat oven to 400

In a baking dish combine potatoes and chicken. Season with salt.

Whisk together cream cheese and milk in a saucepan over medium high heat. Once smooth add in the buffalo sauce, bacon, and garlic powder. Pour mixture over potatoes and chicken.

Once combined sprinkle panko and cheese over top.

Bake for 40 minutes or until potatoes are tender. Sprinkle sliced green onions on top. Enjoy!

Crock Pot Cajun Chicken




Most know...my family loves spicy foods so it was no surprise that this Crock Pot Cajun Chicken was a hit! I adapted it from a Betty Crocker recipe. It's definitely unique since I've never had bacon in cajun food before.  I served it over rice but it would also taste great over noodles as well. The perfect meal for a busy Tuesday!

Crock Pot Cajun Chicken
Heavily Adapted From Betty Crocker
Serves 4
WW PP=6
Cal 225, Carbs 8.5, Fat 7.7, Fiber 1, Protein 30.5

Ingredients
16 oz. boneless skinless chicken tenderloins
1/2 green bell pepper, chopped
1/4 cup chopped onion
1/4 cup chopped celery
2 teaspoons Cajun seasoning
1 can (14.5 oz) petite diced tomatoes, undrained
1 clove garlic, chopped
1/3 cup crumbled bacon bits
1/2 cup reduced fat shredded cheddar jack cheese

Arrange chicken in bottom of crock pot. Sprinkle with cajun seasoning. Add remaining ingredients, (except for bacon)

Cover and cook on low 4 hours. About 15 minutes before serving stir in bacon and break chicken into pieces. Evenly sprinkle cheese over chicken and spoon over rice. Enjoy!

Mini Southwest Chicken Pizzas



Today I'm throwing it back. Waaay...back. These Southwest Chicken Mini Pizzas are a delicious twist on an old favorite. I love mini English Muffin Pizzas and I love creating new types. These mini pizzas are made using chicken, salsa, and shredded cheese. Top them with a dollop of sour cream and serve with a salad and you've got a tasty well balanced meal!


Mini Southwest Chicken Pizzas
Serving size 2 half pizzas
WW PP=2
Cal 193, Carbs 3.3, Fat 3, Fiber 1, Protein 9.5

Ingredients
6 English muffins split in half
2 cups cooked chicken
2 tbsp. southwest seasoning blend (I love Mrs. Dash)
1 cup chunky salsa
1 cup reduced fat shredded mexican cheese blend (I used weight watchers)
sour cream, shredded lettuce, and green onion

Arrange english muffins on a large baking sheet.

Combine southwest seasoning and chicken together.

To assemble pizzas, spread about 1.5 tbsp. salsa on each muffin, top with some of the chicken and about 1.5 tbsp shredded cheese.

Bake at 375 for 15-20 minutes or until muffins are toasted and cheese is lightly browned and bubbly.

Top with any other toppings of your choice. Enjoy!

Skinny Pretzel Cheese Dip





Now that Football season is upon us, I am looking for new snacks to serve during the games. Well, this one is a hit especially because it's low calorie. You'd never know it by the taste...I promise! This Skinny Pretzel Cheese Dip was a HIT at our last neighborhood football party. You've got to try it for yourself!


Skinny Pretzel Cheese Dip
Serves 8
WW PP=3
Cal 120, Carbs 2.1g, Fat 9.5g, Protein 5.1g

Ingredients
8 oz. reduced fat cream cheese, softened
1 cup reduced fat sharp shredded cheddar cheese
1/3 cup light beer (I used Bud Light)
3 tsp. dry ranch seasoning mix
2 tbsp. fat free milk
Pretzels

In a small saucepan over medium high heat combine cream cheese, ranch seasoning, and milk. Slowly whisk in the shredded cheddar cheese. Once smooth pour in the beer. Stirring well.

Remove from heat, and serve with pretzels. Enjoy!

Slow Cooker Ranch Pot Roast




This has got to be one of the easiest Pot Roast recipes I have ever made and the best part is that your slow cooker does all the work for you!

Slow Cooker Ranch Pot Roast
Serves 6

Cal 283, Carbs 20.8, Fat 13, Fiber 2, Protein 23.3


Ingredients
2 lb boneless chuck roast
1 package dry ranch seasoning mix
1 lb small Yukon potatoes (I used fingerling)
1/2 yellow onion, cut into chunks
1/2 bag baby carrots
1/3 cup water


Place roast in bottom of slow cooker. Top with veggies and sprinkle seasoning mix over top. Add water, stir, and cover. Cook on low 7-8 hours. Enjoy!

One Pot Pasta




I'm tired. This cold I have been battling for the past week is really kicking my butt! I really didn't feel like cooking tonight or even blogging but since this was such an easy dish I just had to share! Only four ingredients and incredibly delicious!

TO THIS-In only Ten Minutes!




One Pot Pasta
Serves 6
WW PP=10
Cal 393, Carbs 44.3, Fat 17.5, Fiber 5, Protein 14.6

Ingredients
12 oz spaghetti (I used ronzoni smart taste)
12 oz. Italian three cheese smoked sausage, sliced 
1/2 cup sun dried tomato pesto (or any sauce of your choice)
2 garlic cloves



Add 4 cups water to a large pot over medium high heat, combine spaghetti, sausage, and garlic. Season water with about a tsp salt.

Bring to a boil; reduce heat and simmer, uncovered, until pasta is coked through and liquid has reduced, about 10 minutes. Stir in pesto and enjoy!

BBQ Cowboy Casserole





It seems as if there a billion different versions of this tasty casserole and each one is unique. I like to make mine with tater tots and it is incredible! Something about potatoes and casseroles make me drool and with the weather cooling down I was ready to indulge in a comforting casserole like this!


BBQ Cowboy Casserole
Serves 8
WW PP=4
Cal 182, Carbs 7.2, Fat 8, Fiber 1, Protein 17.2

Ingredients
1.5 lbs lean ground beef or turkey
2 tbsp. bbq hamburger seasoning (I used McCormick Smoked Applewood)
1/3 cup BBQ Sauce (I like stubbs)
1 can petitie diced tomatoes, drained
1/2 cup reduced fat shredded sharp cheddar cheese
1/2 cup reduced fat shredded white cheddar cheese
1/2 bag tater tots


Brown ground beef, drain, and add in the hamburger seasoning, bbq sauce, and tomatoes. Let simmer for 10 minutes.

Transfer meat to a large baking dish. Top with half of the shredded cheese and top with tater tots. Sprinkle remaining cheese over top.

Bake at 400 degrees for 30 minutes. Enjoy!

Crock Pot Applesauce
8-10 large apples cored and sliced
1/2 cup Monk Fruit In The Raw
1 tsp. cinnamon
1/2 cup water

Place all ingredients into the crock pot. Cover and cook on low 6-8 hours stirring occasionally. Serve and enjoy! (Note: if you prefer a smoother applesauce blend before serving)

You can use it in any recipe as a substitute for sugar. I love to bake so I was looking forward to using Monk Fruit In The Raw. Last weekend we went apple picking and I've been wanting to make fresh crock pot applesauce. What a perfect opportunity to use Monk Fruit In The Raw. I used the Bakers Bag and all you do is substitute the Monk Fruit In The Raw for every cup of sugar. If you prefer sweetening up your coffee or tea, Monk Fruit In The Raw also comes in packets.

This applesauce was an instant hit with my family, especially my picky little boy who requested seconds! This was one of the best (if not the best) batch of applesauce I have ever made. I was really impressed! I've been loving Monk Fruit In The Raw so much that I was also sprinkling it over fresh sliced berries. Delish! I'm excited to share my Crock Pot Applesauce recipe with you so that you can try it for yourself and realize how delicious it it! With only four ingredients and the crock pot doing all the cooking for you it's great recipe to make during your busy work week. This applesauce also makes a great topping or side dish!


Crock Pot Applesauce
8-10 large apples cored and sliced
1/2 cup Monk Fruit In The Raw
1 tsp. cinnamon
1/2 cup water

Place all ingredients into the crock pot. Cover and cook on low 6-8 hours stirring occasionally. Serve and enjoy! (Note: if you prefer a smoother applesauce blend before serving)

Crispy Buffalo Stuffed Baked Chicken




Funny, but I bought the ingredients for this dinner a few weeks ago and I just get around to making it! The last week has been crazy busy and I can't believe it's the middle of September already. Crazy! Anyhow, if you are obsessed with all things "Buffalo" then you are going to have to make this recipe. It was a hit!


Crispy Buffalo Stuffed Baked Chicken
Serves 4
WW PP=6
Cal 232, Carbs 12.2, Fat 11.5, Fiber 1, Protein 23.7


Ingredients
4-4 oz. chicken breasts (pounded thin)
1/2 package shake n bake extra crispy
4 oz reduced fat cream cheese, softened
1/4 cup reduced fat shredded sharp cheddar cheese
1/3 buffalo wing sauce (I love Franks)
1 tsp garlic powder
sliced green onions

Pre-Heat oven to 375 and spray a baking dish with non stick cooking spray.

In a large bowl mix together cream cheese, garlic powder, shredded cheddar, and wing sauce.

Pour shake n bake in another bowl and set aside.

Lay out each piece of chicken and spread an even amount of the cheese mixture in the center of each chicken breast. Roll up chicken and coat in the shake n bake.

Place each piece of chicken into the baking dish seam side down. Bake for 25-30 minutes or until juices are clear.

Cut in half and drizzle with extra buffalo wing sauce and chopped green onions. Enjoy!

Crock Pot Queso Chili




I'm on a big Chili kick lately, if you hadn't already noticed. I made Buffalo Chicken Ranch Chili on Sunday in honor of Football Season. Well, today it's nasty and rainy outside and I'm fighting a cold so I didn't feel like doing much in the way of cooking. This is a great recipe when you don't have time or want something simple for dinner. You can't go wrong you mix ooey gooey cheese with chili. It was fantastic!

Crock Pot Queso Chili
Serves 6
WW PP=6
Cal 276, Carbs 11.8, Fat 11.3, Fiber 3.6, Protein 25.1

Ingredients
1.5lbs lean ground beef or turkey
2 tbsp. chili powder
1 tsp. cumin
1 tsp. garlic powder
1 tsp. salt
1 can rotel, undrained
1.5 cups black beans (or any beans of your choice)
1 cup reduced fat shredded cheddar jack cheese



Brown beef over medium high heat. Drain and season with chili powder, garlic powder, cumin, and salt.

Spray the inside of crock pot with non-stick cooking spray.

Add the ground beef, rotel, and pinto beans.  Cover and cook on low for 4-6 hours.

Add the shredded cheese to the crock pot, then stir well to combine. Continue cooking for another 30 minutes or until cheese is melted. Serve with sour cream, chopped onion, tortilla chips or crackers if desired. Enjoy!
