Crunchy Chicken Skillet Tacos




Most who follow my blog know that I make tacos quite often. My family loves them and could eat them every day! I love how versatile they are and it seems like there are a million different ways to prepare tacos. Well, maybe not a million...but you know what I mean. This Crunchy Chicken Skillet Taco recipe is my variation on a favorite. Easy and incredibly delicious!

Crunchy Chicken Skillet Tacos
Serves 6

Cal 268, Carbs 19.8, Fat 10, Fiber 2.1, Protein 24.5

Ingredients
16 oz. boneless skinless chicken tenderloins
1 tbsp. taco seasoning
1/2 cup enchilada sauce
1/2 cup corn
1 can petite diced tomatoes, drained
1/2 cup fat free black beans, rinsed and drained
1.25 cups reduced fat shredded cheddar jack cheese
1/2 cup finely chopped yellow onion
2 cups crushed tortilla chips
Sour Cream and Shredded Lettuce for additional toppings, optional

Sprinkle chicken with 1 tbsp taco seasoning. In a large skillet on medium-high heat add chicken and onions cooking about 10-12 minutes or until chicken is cooked through and onions are soft. Add in the enchilada sauce,black beans, and tomatoes. Let simmer 5 minutes. Top with shredded cheese and crushed tortilla chips. Enjoy!

Crispy Baked Parmesan Pesto Chicken




Today is finally cool enough for me to use the oven and one of our family favorites is baked chicken. I love creating new recipes and since both my husband and I love pesto I decided why not incorporate it into a tasty chicken recipe like Crispy Parmesan Chicken. Not only is this easy, it's ready in 30 minutes. The perfect weeknight dinner!


Crispy Baked Parmesan Pesto Chicken
Serves 4

Ingredients
4 boneless skinless chicken breasts
1 cup panko breadcrumbs
1/3 cup grated parmesan cheese
1 tbsp. garlic powder
1 tsp. salt
1 tsp. pepper
1/2 cup pesto sauce


In a mixing bowl combine dry ingredients.

Dip chicken into pesto and then into dry ingredients coating well. Lay on a lightly greased baking sheet and bake at 400 for 20 minutes or until juices run clear. Enjoy!

Crock Pot Maple Bacon Dijon Chicken





Today was definitely a crock pot dinner type of day. I wanted something with minimal prep and was ready to go when I got home from my son's open house. Hard to believe my baby is starting pre-school next week! Sigh.....time seems to go by so much faster once you have kids. Anyway, this chicken was a hit. I love the sweet and salty combo of maple and bacon. Serve it over rice and pair it with a nice salad and dinner is served!

Crock Pot Maple Bacon Dijon Chicken
Serves 4
WW PP=
Cal 171, Carbs 6.7, Fat 2.7, Protein 26.5


Ingredients
16 oz. boneless skinless chicken breasts (I used tenderloins)
1/4 cup light maple syrup
6 slices bacon cooked and crumbled (bacon bits work too)
1/4 cup dijon mustard
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. cornstarch (optional-but will make for a thicker sauce)
1 tbsp. water


Arrange chicken in bottom of crock pot. Season with salt and pepper. Whisk together syrup and dijon mustard. Pour over chicken. Cover and cook on low for 3.5 hours.

Mix the water and cornstarch together and about 30 minutes before serving add in the cornstarch and bacon. 

Spoon sauce over chicken and serve over rice. Enjoy!

Ranch Cheddar Chicken BLT Wraps



It's hot and humid and I'm in no mood to use the stove. I wanted something light, yet filling and these Ranch Cheddar Chicken Ranch BLT Wraps were the perfect solution! They combine all my favorites and they are so easy to prepare and so tasty!


Ranch Cheddar Chicken BLT Wraps

Cal 345, Carbs 28, Fat 16, Fiber 6, Protein 35

Ingredients
1 large tortilla (I used a high fiber low carb wrap)
1/2 cup grilled chicken breast
2 slices center cut bacon, cooked crisp
2 tbsp. reduced fat sour cream
1 tsp. dry ranch seasoning mix
1 cup shredded lettuce
3 slices tomato ( I used vine ripened)
1/4 cup reduced fat shredded cheddar cheese

In a small bowl combine sour cream and dry ranch seasoning.

Spread ranch sour cream on tortilla and top with remaining ingredients. Roll up tortilla place seam side down and slice in half. Enjoy!

Smoky Southwest Chicken Chili Mac




I don't why but whenever I hear the word "Chili Mac" it reminds me of school hot lunches from childhood and that always grossed me out. (I'm the one who never ate hot lunches as a child) Now that I'm an adult I realize that Chili Mac is obviously not what I thought it was when I was a kid! I've been missing out on all the yummy Chili Mac recipes out there. This Chicken Chili Mac is healthy and absolutely delicious! I'll never question Chili Mac again...that's for sure!


Smoky Southwest Chicken Chili Mac
Heavily Adapted from Picky Palate
Serves 8

Cal 229, Carbs 36, Fat 2.7, Fiber 2, Protein 16

Ingredients
12 ounces wagon wheel pasta
1 tbsp. extra virgin olive oil
1/2 cup finely chopped onion
1 chipotle chili pepper in adobo
1 tbsp. chili powder
2 cups cooked shredded chicken breast (I grilled mine)
1 can Rotel diced tomatoes, mild
1 1/2 cups reduced sodium chicken broth
1/2 cup corn
1 teaspoon dry Ranch seasoning
1/2 cup reduced fat shredded cheddar cheese
Chopped Cilantro, optional

Cook pasta according to package directions. Drain and run under cool water to stop cooking.

Add oil to a large non stick pan.over medium high heat saute onions until softened about 5 minutes.  Add chicken, chipotle pepper, rotel, broth, corn, wagon wheel pasta, chili powder, and ranch seasoning. Stir until well combined. Sprinkle with cheddar cheese. Reduce heat to low and simmer until cheese is melted. Top with fresh cilantro if desired. Enjoy!

Crock Pot Chipotle Lime Chicken Wraps




I love the smoky spicy flavor of Chipotle Peppers and when you combine them with a little lime juice and you've got a flavor explosion! I had originally planned on grilling the chicken but Mother Nature was not cooperating and I was not about to go and grill in a crazy down pour. So, I decided to use my crock pot instead. What a simple, easy, and delicious meal!


Crock Pot Chipotle Lime Chicken Wraps
Makes 4 Wraps

Cal 293, Carbs 33, Fat 8, Fiber 4, Protein 31


Ingredients
16 oz boneless skinless chicken 
4 chipotle peppers in adobo, chopped
1 tsp. chili powder
1/2 tsp. salt
Juice of one lime
4 12 inch flour tortillas
1 can diced tomatoes, drained
1 cup reduced fat shredded cheddar cheese, divided

Arrange chicken in the bottom of the crock pot. Season with salt and chili powder. Add in the chipotle peppers and lime juice. Cover and cook on low 3-4 hours. Shred chicken and remove from crock pot.

Build the wraps by laying shredded cheese on the bottom of tortilla, and then arranging the chicken mixture. Top with a little more grated cheese and roll up.

Serve with sour cream or salsa if desired. Enjoy!

Pretzel Crusted Skillet Bacon Mac and Cheese



Yep, sounds ridiculously fattening....and well..it kinda is. Everyone has gotta splurge once in a while. Or at least I think so. I love Macaroni and Cheese. It is so versatile and one of my absolute favorite foods. Add smoky bacon and crispy salty pretzels to it and it is pure heaven! Drool!


Pretzel Crusted Skillet Bacon Mac and Cheese
Serves 8

Ingredients
16 oz. short pasta (I used Shells)
2 cups shredded american cheese blend, divided
1.5 cups low fat milk
2 tbsp. butter
1 tbsp. flour
1 tsp. salt
1 tsp. black pepper
6 slices bacon, cooked and crumbled
1 cup crushed pretzels

Cook pasta to al dente, drain and set aside.

While pasta is cooking, in a large skillet melt the butter. Once melted whisk in flour, salt, and pepper. Stir for about 3 minutes. Slowly, stir in the milk and once thickened add in half of the shredded cheese. Stir until melted.

Add in the cooked pasta and top with remaining shredded cheese, crushed pretzels, and bacon.

Place under broiler for about 3-4 minutes or until the top is golden brown. Enjoy!

Crock Pot Chicken French Dip Sandwiches



As I was laying in bed the other night watching Diners, Drive Ins and Dives they had an episode in which a Pork French Dip Sandwich was featured. It looked so amazing I was literally drooling! I knew I had to make that sandwich. Unfortunately, my local Super Target was completely out of pork tenderloins when I stopped there today. What the what? Sold out of pork? So instead of a Pork French Dip Sandwich I made a Chicken French Dip. Well, let me tell you....the end result was Fantastic! I have seriously been missing out all these years! This is going to be a new favorite of ours for sure!


Crock Pot Chicken French Dip Sandwiches
Serves 4
WW PP=10
Cal 380, Carbs 37, Fat 9, Protein 37


Ingredients
4 boneless skinless chicken breasts
1 tsp. garlic powder
1 tsp. salt
1 tbsp. Worcestershire Sauce
1 can French Onion Soup
1/2 cup water
4 slices swiss cheese
Crusty French Bread

Arrange chicken in the bottom of crock pot. Season with garlic powder and pepper. Add in soup, Worcestershire, and water. Cover and cook on low 4 hours. About 15 minutes before removing from crock pot add the sliced cheese to the top of the chicken.

Serve chicken on french bread with a side of au jus for dipping. Enjoy!

Slow Cooker Loaded BBQ Chicken and Potato Soup




You might be thinking that I am crazy for making soup in the middle of August but eh...who cares! I love a good pot of soup especially if it's made in the slow cooker. Such a time saver! The idea behind this soup comes from my Loaded BBQ Chicken and Potato Casserole. It's basically the same thing but in a soup. It was beyond good and a hit with the entire family!


Slow Cooker Loaded BBQ Chicken and Potato Soup
Makes Approx 8 Cups
WW PP=5 (Per Cup)
Cal 181, Carbs 19.8, Fat 4.2, Fiber 1, Protein 15.6


Ingredients
12 oz. boneless skinless chicken tenderloins
5 cups frozen diced potatoes
6 cups fat free chicken broth
1/2 cup reduced fat milk (I used 2 percent)
1/2 yellow onion diced
1/2 cup bbq sauce
1/3 cup crumbled bacon or bacon bits
1 tsp. garlic powder
1/2 tsp. salt
1 cup reduced fat shredded cheddar jack

Add chicken, bbq sauce, onion, chicken broth, garlic powder, and salt to the slow cooker. Cover and cook on low for 5-6 hours. Break chicken into pieces and stir in milk, bacon, and shredded cheese. Continue cooking for another 30 minutes.

Ladle soup into bowls and top with additional bacon, green onions, and sour cream, if desired. Enjoy!

Spicy Four Cheese Baked Tacos




Happy Sunday! It's another Taco Night around here. I honestly have to say that I NEVER get sick of tacos! Hence why we have them so often. I do try and come up with new ways to prepare them but classic beef tacos are by far my favorite! This recipe combines the traditional beef taco along with a blend of four cheeses and spicy sriracha for a spicy, cheesy, fantastic taco!

Spicy Four Cheese Baked Tacos
Makes 10 Tacos
WW PP=5
Cal 195, Carbs, 10.2, Fat 9.4, Fiber 1, Protein 14.7

Ingredients
1.5lbs lean ground beef or turkey
1 taco packet
1/2 cup water
2 tbsp. sriracha 
1 cup Mexican shredded four cheese blend (I used Sargento)
10 hard shell tacos
additional toppings of your choosing

Pre-Heat oven to 350

Brown ground beef over medium high heat. Drain and add in the taco seasoning, water, and sriracha. Let simmer for about 10 minutes. Spoon into taco shells and sprinkle with cheese.

Bake for about 15 minutes or until cheese is melted. Serve with additional toppings of your choice. Enjoy!

Cheesy Pesto Tortellini Bake




This chilly weather has me craving comfort foods like this Cheesy Pesto Tortellini Bake. It's absolutely delicious and only contains five ingredients! One of the reasons why it makes such a great weeknight meal. You can't go wrong with cheesy pasta topped with a breadcrumb crust. Fabulous!

Cheesy Pesto Tortellini Bake
Serves 6


Ingredients
4 cups cheese tortellini (I used frozen, but fresh is fine, just adjust your cooking time)
1/2 cup basil pesto (I love Classico)
1 cup shredded mozzarella
1/2 cup panko bread crumbs
1/2 cup grated parmesan cheese

Pre-Heat Oven to 375.

In a small bowl combine bread crumbs and parmesan cheese. Set aside.

Cook pasta to al dente. Drain and arrange in the bottom of a casserole dish. Toss with tortellini with pesto and top with shredded cheese. Sprinkle breadcrumb mixture evenly over the top.

Bake for 15 minutes or until cheese is melted and top is golden brown. Enjoy!

Grilled Chicken Teriyaki Club Rice Bowls




I love Bacon Wrapped Chicken Teriyaki. The combination of sweet and spicy is so tasty! Unfortunately I did not have any bacon in the house (just bacon bits) so I decided to make a Teriyaki Chicken Rice Bowl instead. Mixing together Grilled Teriyaki Chicken, Bacon Bits, and Pineapple Chunks and serving over a bed of brown rice. It was an instant hit with the hubs and I loved it too!


Grilled Chicken Teriyaki Club Rice Bowls
Serves 4

Ingredients
16 oz. boneless skinless chicken tenderloins
1/2 cup Teriyaki Sauce, divided (I like LaChoy)
2 cups pineapple chunks, drained
1/2 cup crumbled bacon bits
4 cups cooked brown rice

Grill chicken over medium-high heat for about 8 minutes or until juices run clear. Baste with half of the teriyaki sauce. Cut chicken into chunks.

To Assemble Bowls-Evenly divide chicken and serve over one cup rice, 1/8 cup bacon bits, and 1/2 cup pineapple chunks. Drizzle remaining teriyaki sauce over each bowl. Enjoy!
