Turkey Bacon Ranch Club Melts



I love a good sandwich and sometimes it's fun to have sandwiches for dinner. Club sandwiches are a favorite in my house and I thought why not mix it up and create a Turkey Ranch Club Melt. They are really easy to prepare and delicious!

Turkey Bacon Ranch Club Melts
Makes 4 Sandwiches
WW PP=7 Per Sandwich
Cal 308, Carbs 14g, Fat 16g, Fiber 2g, Protein 17g

Ingredients
8 slices deli smoked turkey
12 slices hickory smoked bacon, cooked crisp
4 tbsp. ranch sandwich spread (I like Hidden Valley)
4 slices white cheddar cheese
4 slices tomato
Bread of your choice (I used Honey Wheat)

Arrange sandwiches by spreading 1 tbsp. ranch on bread and top with turkey, bacon, cheese, and tomato.

Using a panini press or griddle heat sandwich about 2-3 minutes per side or until bread is toasted and cheese is melted. Enjoy!

Buffalo Chicken Lasagna Roll Ups



I love Buffalo Chicken Lasagna and make it often. I've made it in the crock pot and oven but I've never made buffalo chicken roll ups before. I decided since I had all the ingredients on hand that it would make the perfect dinner. Who doesn't love spicy, creamy, cheesy pasta goodness...right? These roll ups were SO good. Better than the traditional buffalo chicken lasagna. I'll be making these again soon!

Buffalo Chicken Lasagna Roll Ups
Makes 10 Roll Ups

Cal 173 Carbs 14, Fat 6.5, Fiber 1, Protein 14.7

Ingredients
10 lasagna noodles
2 cups cooked and shredded chicken 
4 oz. reduced fat cream cheese
1.5 cups reduced fat shredded cheddar jack cheese
1/4 cup blue cheese crumbles
1/3 cup buffalo sauce (you can adjust this to your taste)
1 cup milk
1 tsp. garlic powder
1 tsp. onion powder
salt and pepper to taste

Pre-Heat oven to 375.

Add lasagna to a large pot of boiling water. Cook just shy of al dente. Drain and set aside.

In a large sauce pan over medium heat add in the cream cheese, blue cheese crumbles, and milk. Whisk until smooth. Sprinkle in the garlic and onion powder.

In a large bowl, combine the shredded chicken, half of the shredded cheese and buffalo sauce. Stir and set aside.

To assemble, put a spoonful of the sauce on each piece of lasagna. Next, spread the chicken and buffalo sauce mixture evenly on top of the sauce and roll up.

Put some of the sauce on the bottom of a casserole dish. Place each lasagna roll up onto the sauce.

Pour the remaining sauce on the lasagna roll ups. Sprinkle with remaining shredded cheese and extra buffalo sauce. Top with blue cheese crumbles. 

Bake for 20-25 minutes.  Let stand about 5 minutes before serving. Enjoy!

Ham and Cheese Baked Ziti



It's cold, dreary, and raining outside. That calls for a comfort food type of meal and this Ham and Cheese Baked Ziti is the perfect one! It's a great way to use up leftover ham and makes the perfect freezer meal. It's a popular dinner in my house and a simple and easy one!


Ham and Cheese Baked Ziti
Adapted from Betty Crocker
Serves 8

Ingredients
16 oz. ziti pasta cooked to al dente
1/4cup butter or margarine
1 garlic clove, finely chopped
1/4 cup flour
1/2teaspoon salt
2cups milk
1/2teaspoon Dijon mustard
2 cups shredded cheddar jack cheese 
1/3cup grated Parmesan cheese
2 cups cooked, diced ham

Heat oven to 350ºF. Cook and drain pasta to al dente and set aside

Melt butter in a saucepan over low heat. Cook garlic in butter 30 seconds, stirring frequently. Stir in flour and salt. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Gradually stir in milk. Heat to boiling, stirring constantly for 1 minute. Stir in mustard and one cup of the cheese. Cook, stirring occasionally, until cheese is melted.

Stir pasta and ham into cheese sauce. Pour into ungreased 2-quart casserole. Sprinkle with remaining shredded cheddar jack and parmesan cheese. Bake uncovered 20 to 25 minutes or until bubbly. Enjoy!

Slow Cooker Jalapeno Cheddar Chicken Tacos



I'll admit, I do make cream cheese chicken tacos ALOT. It's a favorite in our house and they are so easy. Who doesn't like easy meals, right? Well, when I came across this Cheddar Jalapeno Cream Cheese I knew I had to buy it and make chicken tacos with it. Cheese and Jalapenos? Yes, Please! The end result was cheesy, creamy, spicy, goodness!

Slow Cooker Jalapeno Cheddar Chicken Tacos
Makes 10 Tacos
WW PP=5
Cal 190, Carbs 17.6, Fat 7.3, Fiber 2.8, Protein 12


Ingredients
16 oz. boneless skinless chicken tenderloins
1 tsp garlic powder
4 oz. cheddar jalapeno cream cheese
1 can petite diced tomatoes, undrained
1 can great northern beans, rinsed and drained
1/3 cup crumbled bacon or bacon bits
10 hard shell tacos

Arrange chicken in bottom of crock pot. Add all ingredients except for bacon. Cover and cook on low 4 hours. About 15 minutes before serving break apart chicken and stir in bacon. Spoon into taco shells and enjoy!

Slow Cooker Loaded Cajun Potato Soup



The calendar may say that it's spring but it certainly doesn't feel like it around here! I woke up to a dusting of snow this morning and it is COLD outside. So I figure while it is still feeling like winter around here I will continue making soups. This Loaded Cajun Potato Soup is a tasty soup with a kick! The perfect cold weather meal!

Slow Cooker Loaded Cajun Potato Soup
Serves 8

Cal 181, Carbs 25.2, Fat 4.5, Fiber 2, Protein 9.3

Ingredients
1 Bag Oreida Frozen Southern Style Potatoes
5 cups fat free chicken broth
1 yellow onion, diced
2 tbsp. cajun seasoning (you can use more or less depending on how spicy you'd like it)
1/2 cup fat free half and half
1 cup reduced fat shredded cheddar cheese
1/2 cup cooked and crumbled bacon
sour cream and green onion for toppings

Add potatoes, chicken broth, cajun seasoning, and chopped onion to the crock pot. Stir. Cover and cook on low for 6-8 hours. During last hour of cooking time, stir in the half and half, shredded cheddar, and bacon. Ladle soup into bowls and top with sour cream and sliced green onions if desired. Enjoy!

Crock Pot Sticky Pork Chops





I have a recipe for sticky wings that I used to make all the time back in the day and I've been craving them for a while now but I still haven't got around to making them and I don't have any chicken in the house. I do have pork chops so I decided to test out the recipe on the chops instead. I have no idea why I hadn't done this before. They were fantastic! My husband really enjoyed them as well and so did my picky toddler. If you are a fan of pork chops and are looking for a new way to prepare them then be sure to give this recipe a try!

Crock Pot Sticky Pork Chops
Serves 4

Ingredients
4 boneless sirloin pork chops
1 tbsp. onion powder
2 cloves garlic, chopped
1/4 chicken broth or water
1/2 cup bbq sauce
1/2 cup apricot jam

Arrange pork chops in bottom of crock pot. Sprinkle with onion and chopped garlic. Add in the chicken broth.

Creamy Lemon Garlic Fettuccine




It certainly doesn't feel like spring around here but I can pretend it is by making one of my favorite spring/summer dishes. I love Lemon Pasta. It's so creamy and refreshing and isn't loaded in calories like you find in a traditional fettuccine dish. It's a hit with the whole family!

Creamy Lemon Garlic Fettuccine
Serves 8
WW PP=7
Cal 272, Carbs 43.2, Fat 5.7, Fiber 2, Protein 11

Ingredients
16 oz. fettuccine pasta
2 garlic cloves, chopped
1 tbsp. extra virgin olive oil
1/4 cup fresh lemon juice
zest of one lemon
4 oz. reduced fat cream cheese
1/3 cup fat free half and half
1/2 cup grated parmesan cheese
chopped parsley

Cook fettuccine to al dente. Drain and set aside.

Meanwhile saute garlic in olive oil for about one minute. Add in cream cheese and half and half. Whisk until smooth. Slowly whisk in lemon juice and lemon zest. Let simmer 1-2 minutes. Toss fettuccine with lemon sauce and top with grate parmesan and chopped parsley. Enjoy!

Cheesy Crock Pot French Dip Sandwiches



I seriously can not get enough of these sandwiches. I've made a lot of French Dip Sandwiches this winter. They are so easy to prepare and make the perfect dinner for a busy weekend. I decided to make these French Dip Sandwiches with cheese because, well, come on....cheese makes everything better! You have got to try them for yourself!

Cheesy Crock Pot French Dip Sandwiches
Serves 6

Ingredients
3lb lean boneless chuck roast
1 cup beef broth
1 tbsp. Worcestershire sauce
1 tbsp. soy sauce
1 tsp. garlic powder
1 tsp. onion powder
6 slices swiss cheese
French Bread

Place roast in the bottom of your crock pot. Add remaining ingredients, except for the cheese. Cover and cook on low 8 hours. Shred meat and pile onto french bread. Top with a slice of swiss cheese and broil for 2 minutes or until melted. Serve with a side of juice for dipping. Enjoy!

Crock Pot Tortellini Rustica



I love a good pasta dish and this one is another favorite of ours. What's even better is that the Crock Pot does all the work for you. That is my kind of meal!

Crock Pot Tortellini Rustica
Serves 6
WW PP=10
Cal 381, Carbs 40.6, Fat 16.5, Fiber 4, Protein 16.6

Ingredients
6 cups tortellini refrigerated or frozen (I used Buttoni-but if you use frozen just increase the cooking time)
1/4 cup water
1/2 cup pesto sauce
1 cup chopped cherry tomatoes
2 garlic cloves, minced
2 cups spinach
1/2 shredded mozzarella cheese

Add all ingredients except for cheese to the bottom of your crock pot. Cover and cook on low for 3 hours. During the last 10 minutes sprinkle cheese over the top. Garnish with chopped basil if desired. Enjoy!

Mexican Sloppy Joes





Did you know that today is National Sloppy Joe Day? I didn't even realize that they had a day dedicated to Sloppy Joes! Although up until a few years ago I never even ate them. It wasn't that I didn't like them I just found them to be "Eh" take it or leave it, that is until I started experimenting with different sloppy joe recipes and now I really enjoy them. So, in honor of Sloppy Joe Day, I decided to make Mexican Sloppy Joes. It was a fun twist on the traditional sloppy joe and very tasty! Go ahead and give it a try. I am sure you love them!Mexican Sloppy Joes
Serves 4
WW PP=10 (One Sandwich with Whole Wheat Hamburger Bun)
Cal 406, Carbs 36, Fat 13, Fiber 3, Protein 34.5

Ingredients
1 lb lean ground beef
1 taco seasoning packet (I used low sodium)
1/2 cup water
1 8oz. can tomato sauce
1 can enchilada sauce
1 can Rotel, drained
1/2 cup low sodium fat free black beans, rinsed and drained
4 slices reduced fat cheddar cheese
4 hamburger buns or rolls (I used whole wheat buns)



Cook meat in large skillet over medium-high heat 5-10 minutes or until no longer pink, stirring frequently; drain.

Stir in remaining ingredients except for cheese. Simmer 15-20 minutes, stirring occasionally. Spoon meat mixture into rolls and top with cheese. Enjoy!

Spicy Baked Penne Pasta



Happy St. Patrick's Day! As most know, we had our St. Patrick's Day dinner yesterday. Today we are enjoying a family favorite. Both my husband and I love spicy foods and this Spicy Baked Penne has hot italian sausage and spicy arrabiata marinara sauce. If you like spice, then you have to give this dish a try. It's delicious!


Spicy Baked Penne Pasta
Serves 8
WW PP=10
Cal 376, Carbs 50.5g, Fat 11.2g, Fiber 6.1g, Protein 17.6g

Ingredients
16 oz. Penne Pasta (I used Ronzoni)
12 oz. hot italian sausage cooked and crumbled (turkey sausage works great too)
2 cups Spicy Marinara Sauce (I used Barilla Arrabbiata)
1.25 cups reduced fat shredded mozzarella cheese
1/4 cup grated parmesan cheese

Cook pasta to al dente. Drain and set aside.

Combine penne, sausage, and marinara, and pour into a casserole dish. Sprinkle mozzarella and parmesan cheese over top.

Bake at 375 for 15 minutes or until heated through and cheese is melted. Garnish with fresh basil if desired. Enjoy!

Crock Pot Corned Beef Sandwich Melts




I know St. Patrick's Day is tomorrow but we are celebrating today. Every year our St. Patrick's Day dinner consists of Corned Beef Sandwiches. I decided to mix it up a little this year by making these tasty Corned Beef Sandwich Melts. If you are a fan of Corned Beef you have got to give this sandwich a try!

Crock Pot Corned Beef Sandwich Melts

Ingredients
2-3lb corned beef brisket
1 bottle Guiness (or any other beer of your choice)
Swiss cheese
horseradish spread
rye bread
non stick cooking spray

Place corned beef in bottom of crock pot. Pour beer over brisket. Cover and cook on low 8 hours or high 6 hours.

Remove from crock pot and slice.

To assemble sandwiches spread horseradish on both sides of rye bread. Top with sliced corned beef and swiss cheese.

Spray a pan with non stick cooking spray and toast sandwich. About 3 minutes per side or until golden brown and cheese is nice and melted. Enjoy!

Creamy Chicken Carbonara Pasta



I know traditional carbonara pastas are made with egg but I'm just not down with eggs and pasta. So, I've created my own egg free skinnier version of a popular past dish. It's a perfect easy weeknight meal and so delicious!

Creamy Chicken Carbonara Pasta
Serves 8
WW PP=8
Cal 314, Carbs 43.7g, Fat 7.5g, Fiber 2.1g, Protein 17.5g


Ingredients
1 16oz. box pasta of your choice (I used bowties)
2 cups cooked, diced chicken
1/2 cup crumbled bacon (I used bacon bits)
1/2 cup peas
4 oz. reduced fat cream cheese
1/3 cup grated parmesan cheese
1/2 cup reduced fat milk
1 clove garlic, minced
salt and pepper to taste

Boil pasta to al dente. Drain and set aside.

While pasta is cooking in a large saucepan whisk together cream cheese and milk until smooth. Add in the garlic and parmesan cheese. Simmer for 3-4 minutes. Add in the chicken, bacon, and peas. Add noodles and toss to coat. Season with salt and pepper. Enjoy!

Smoky Chipotle Crock Pot Burrito Bowls




If you haven't noticed the pattern here....I've been all about spicy meals lately. I love love love Chipotle Peppers and I love making recipes that use these smoky and spicy peppers! These Smoky Chipotle Crock Pot Burrito Bowls are easy to prepare and so so good. You can make them with chicken or beef but I had a chuck roast in the freezer that I wanted to use and it worked great.

Smoky Chipotle Crock Pot Burrito Bowls
Serves 4
WW PP=10 (1 serving beef +1 cup cooked rice)
Cal 378, Carbs 47.2 g, Fat 10.7 g, Fiber 4.5 g, Protein 24.7

Ingredients
1-2 lb chuck roast
2-3 chipotle peppers in adobo, chopped
1/2 yellow onion, cut into chunks
1/3 cup tomato sauce
1 cup black beans, rinsed
2 garlic cloves
1 tbsp chili powder
1 tbsp. cumin
1 tsp. salt
1 tsp. pepper
1/2 cup beef broth
4 cups cooked rice
Additional toppings of your choice (I used cheese, tomatoes, and cilantro)


Cut roast into chunks and place in the bottom of your crock pot. Add remaining ingredients to the pot except for rice.

Cover and cook on low for 7-8 hours.

Remove beef and shred with two forks. Spoon meat over hot cooked rice and any other toppings of your choice. Enjoy!

Crock Pot Buffalo Style Pork Chops



I know what you must be thinking. Buffalo Pork Chops? Yes, it's true. I made Buffalo Style Pork Chops in my Crock Pot. And they were good. Actually not just good but...great! I don't make pork chops all that often and when I do they are usually grilled. I still haven't busted out the grill and they had a sale on pork loin chops at the grocery store and I wanted a unique way to prepare them. Hence the "Buffalo Style." I served these pork chops over rice but you can eat them with a side of veggies or a baked potato too. If you like pork chops you have got to give this recipe a try!

Crock Pot Buffalo Style Pork Chops
Makes 4 Chops

Ingredients
4 boneless pork loin chops
1/2 cup chicken stock
1/3 cup buffalo wing sauce
1 tsp. garlic powder
3/4 cup shredded mozzarella/provolone cheese blend

Arrange pork chops in bottom of crock pot. Season with garlic powder. Add in the chicken stock and wing sauce. Cover and cook on low for 4 hours. About 10-15 minutes before serving, top chops with shredded cheese. Continue cooking until cheese is melted. Serve over rice. Enjoy!

Crock Pot Santa Fe Chicken Chili



This has probably got to be one of the simplest Chicken Chili recipes I have ever made. I was certainly happy about that because my day was non stop busy. It was so nice to come home and not have to do anything except spoon the chili into bowls and add a little shredded cheese and sour cream. My kind of meal!

Crock Pot Santa Fe Chicken Chili
Serves 4
WW PP=4
Cal 170, Carbs 14.7, Fat .5g, Fiber 2g, Protein 24.7

Ingredients
16 oz. boneless skinless chicken (I used tenderloins)
1 pkg. Lawrys Southwest Chicken Seasoning
1 14 oz. can diced tomatoes, undrained
1 8oz. can tomato sauce
1/2 cup fat free low sodium black beans, drained
1 cup corn
shredded cheese, sour cream, tortilla chips for topping

Arrange chicken in bottom of crock pot. Add the beans, corn, and diced tomatoes.

In a small bowl mix together seasoning mix and tomato sauce. Pour over chicken mixture. Cover and cook on low for 4-6 hours. About 10 minutes before serving break apart chicken. Top with shredded cheese, sour cream, tortilla chips or any other toppings of your choice. Enjoy!

Chocolate Chip Banana Nut Bread




The men in my house love Bananas. Like really really love them! I feel like I am constantly buying them so why not use some of those extra bananas to make chocolate chip banana nut bread. Of course if you don't do nuts (like me) this is just as tasty without. It was a hit with my family and my toddler is already asking me to make more!

Chocolate Chip Banana Nut Bread
Makes 10 slices
WW PP=8 per 1.5 inch slice

Ingredients
1 box Betty Crocker Banana Nut Muffin Mix
2 eggs
1/2 cup water
1/4 cup vegetable oil (you can always sub applesauce if you want a skinny version)
1/2 cup mashed ripe bananas
1/2 cup semi-sweet mini chocolate chips

Pre-Heat oven to 375

Lightly Spray a 9x5 loaf pan with cooking spray.

In a large bowl mix together muffin mix, eggs, water, oil, and bananas. Once well blended stir in the chocolate chips.

Pour batter into the loaf pan and bake for 40-45 minutes or until cooked through and lightly browned on top.
Let cool one hour before slicing. Enjoy!

Smoky Buffalo Mac and Cheese



Do you like spicy pasta dishes? Well, then I have the recipe for you! We love spicy in our house and honestly can't get enough of it! I frequently post "Buffalo Sauce" inspired dishes on my blog and here is another. What makes this dish so spicy is the combination of chipotle peppers and buffalo wing sauce. If you can handle the heat you will be in cheesy smoky and spicy heaven! (Of course you can adjust the amount of hot sauce and peppers to adjust to your taste) We sure were. It was the perfect balance of spicy and cheesy!


Smoky Buffalo Mac and Cheese
Serves 6
WW PP=8
Cal 313, Carbs 47.6 g, Fat 8.6 g, Fiber 5 g, Protein 14.3g

Ingredients
16 oz. box elbow macaroni (I used Ronzoni Smart Taste)
2 oz. reduced fat cream cheese
1 cup fat free milk
2 chipotle peppers, finely chopped
1/3 cup Buffalo Wing Sauce (I love Franks)
1/2 cup shredded smoked gouda
1/2 cup shredded reduced fat cheddar cheese
1/2 cup cooked and crumbed bacon
1/4 cup crumbled blue cheese, optional.
green onions for topping, optional

Cook pasta to al dente. Set aside.

While pasta is cooking whisk together milk and cream cheese until smooth. Once thickened add in the peppers and buffalo sauce. Let simmer 2-3 minutes. Next slowly whisk in the gouda and cheddar cheese. Toss in the bacon and macaroni and stir well. Top with blue cheese and green onions if desired. Enjoy!
