Fire Roasted Tomato Baked Penne




I love making baked pasta dishes. Especially in the fall. There is something so comforting about a cheesy baked pasta dish. Yummo! I also love Fire Roasted Tomatoes in pasta recipes. The flavor is amazing! I made this dish using a meat sauce, but it also tastes great without. You've got to try it for yourself!


Fire Roasted Tomato Bake Penne
Serves 8

Cal 326, Carbs 40.5, Fat 8.6, Fiber 3.7, Protien 22.1

Ingredients
12 oz. penne pasta, cooked to al dente (I used Ronzoni)
1 lb. lean ground beef
2 tbsp. dry Italian seasoning blend
1 tsp. garlic powder
1.5 cups marinara sauce
1 can fire roasted diced tomatoes, drained
1.25 cups shredded Italian cheese blend

Brown ground beef in a large skillet over medium high heat. Drain and add in the garlic powder, Italian seasoning, marinara sauce and fire roasted tomatoes. Bring to a simmer. 

While mixture is simmering arrange noodles in a casserole dish. Pour meat mixture over pasta. Combine well. Sprinkle cheese over top.

Bake at 375 for 20 minutes or until heated through and cheese is melted. Enjoy!
