Smoked Gouda Bacon Chicken and Rice Bake



OK, so I had no idea what to make for dinner and literally decided experiment with some ingredients I had on hand. I always have chicken as well as rice in the house and last week I had bought some smoked gouda and decided to try and make a creation with it. Well, it turned out fantastic. The Smoked Gouda was creamy and went perfectly with the bacon, chicken, and rice. It was a hit!


Smoked Gouda Bacon Chicken and Rice Bake
Serves 6

Cal 275, Carbs 23,3, Fat 9, Fiber 2, Protein 25.1


Ingredients
16 oz. boneless skinless chicken breasts, cooked and shredded
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. salt
4 oz. smoked gouda cheese
1/3 cup crumbled bacon or bacon bits
1 cup milk (I used 2 percent)
1/3 cup shredded reduced fat cheddar cheese
4 cups cooked brown rice

In a large sauce pan over medium heat, whisk together milk and gouda cheese. Stirring well until melted.

Season cooked chicken with garlic powder, onion powder, and salt. Place into a baking dish along with the rice and bacon. Pour cheese sauce over the top and stir combining well. Sprinkle top with shredded cheddar.

Bake at 325 for about 15 minutes or until casserole is heated through and cheese is melted. Enjoy!
