Yes, I know. It's August and I'm making Chili. Well, what can I say? My family loves Chili anytime of year! I ended up making this in my crock pot so I didn't have to heat up the kitchen by turning on the stove. This Three Cheese Jalapeno Ranch Chili is a spin on my Jalapeno Ranch Chili except I added a few shredded cheeses in it and who doesn't love ooey gooey melted cheese? It was a hit!
Three Cheese Jalapeno Ranch Chili
Cal 308, Carbs 11.2, Fat 14.2, Fiber 2, Protein 30.6
1.5 lbs lean ground beef or turkey
1 tbsp. dry ranch seasoning
1 tbsp. chili powder
1 small yellow onion, chopped
1 8oz. can tomato sauce
1 jalapeno, diced with seeds removed
1 can petite diced tomatoes, undrained
3/4 cup corn
1/2 cup water
1/2 cup reduced fat shredded cheddar cheese
1/2 cup reduced fat shredded white cheddar cheese
1/2 cup reduced fat shredded colby jack cheese
In a skillet over medium heat, brown meat with onion and pepper and cook until slightly soft. Transfer to the crock pot and add the rest of the ingredients. Cover and cook on low for 4-6 hours. Serve with sour cream and additional cheese if desired. Enjoy!
