Skinny Stovetop BBQ Chicken Mac and Cheese




I love BBQ Chicken Macaroni and Cheese but it doesn't really love my waistline! I wanted to come up with a delicious alternative to the full fat version and I think I've found it! I played around with a few ingredients and came up with this recipe. It was so incredibly cheesy and good! A hit with the whole family and it also freezes well which is an added bonus!

Skinny Stovetop BBQ Chicken Mac and Cheese
Serves 6
WW PP=10
Cal 356, Carbs 53, Fat 8, Fiber 5, Protein 23.1

Ingredients
12 oz. elbow macaroni (I used Ronzoni)
2 cups cooked chicken breast, cut into cubes
1/2 cup BBQ Sauce (I use Stubbs)
1.25 cups shredded mozzarella/provolone cheese blend
1/3 cup crumbled bacon or bacon bits
1 tsp. garlic powder
1/2 tsp. salt
1 oz. reduced fat cream cheese
1/2 cup reduced fat milk

Cook pasta to al dente. Drain and set aside.

While pasta is cooking, in a large saucepan whisk together cream cheese and milk. Once smooth season with garlic powder and salt. Slowly stir in the shredded cheese. Whisk until melted and bubbly. Next add in the chicken, bacon, bbq sauce, and macaroni. Stir until combined. Serve immediately. Enjoy!

  1. What is the serving size? I see the calorie count but is that for the entire dish or is there a specific serving size?

    Serving size is one cup but I actually ended up getting seven cups out of the entire dish.
