Pizza Roll Ups



Is it still summer? If so, it certainly doesn't feel like it here in Chicagoland. It's rainy and downright Chili! I wanted something warm and toasty and even those these tasty little roll ups are usually served as an appetizer, I made mine a meal by serving a Caesar Salad along with it. I love that we can each customize our toppings to our liking. We used pepperoni, spinach, fresh tomato, and a pizza cheese blend. They were delish!


Pizza Roll Ups
Makes 8 Roll Ups
WW PP=4 (Per Roll)
Cal 160, Carbs 19.2, Fat 5.7, Fiber 4, Protein 9.1

Ingredients
4 12 inch flour tortillas
2 oz. turkey pepperoni
1/2 cup pizza sauce (I like Muir Organic)
1 cup shredded pizza blend cheese
2 cups fresh baby spinach
8 slices tomato
1/4 cup grated parmesan cheese
cooking spray

Pre-Heat Oven to 400.

Spread each tortilla with about 2 Tbsp. of the pizza sauce, spreading sauce to about 1/2 inch from edges.
Add about 1/2 oz of pepperoni to each tortilla, along with 1/2 cup baby spinach, 1/4 cup shredded cheese, and 2 slices tomato. 

Roll up tortillas from one side and place on a baking sheet with seam side down. Spray lightly with a cooking spray and sprinkle with Parmesan cheese.

Bake for about 10 minutes or until golden brown. Cut each tortilla in half. Serve with additional pizza sauce for dipping, if desired. Enjoy!
