Creamy White Cheddar and Chipotle Bowtie Pasta




I am really on a big pasta kick lately. Probably not the best kick to be on given my diet so hopefully I get my carb cravings out of my system soon! Since we are all about the spice in our house this Creamy White Cheddar Chipotle Bowtie Pasta really hit the spot! If you are a fan of chipotle peppers, definitely give this dish a try!

Creamy White Cheddar and Chipotle Bowtie Pasta
Serves 6
WW PP=8
Cal 298, Carbs 46.3, Fat 7, Fiber 3g, Protein 12

Ingredients
12 oz. Bowtie Pasta, cooked to al dente
2 chipotle peppers in adobo sauce, diced
1.25 cups shredded sharp white cheddar cheese
3 oz. reduced fat cream cheese
1 cup reduced fat milk (I used two percent)
1 cup petite diced tomatoes
salt to taste

In a large saucepan over medium-high heat whisk together the milk and cream cheese. Reduce heat to low and slowly stir in the shredded cheese. Once cheese is melted add in the chipotle peppers and tomatoes. Taste and season with salt, if necessary. Pour sauce mixture over bowties and toss to coat. Garnish with cilantro or green onion if desired. Enjoy!
