Slow Cooker Beef Fajita Bowls



This is the perfect meal for a cold snowy Sunday. It's also very easy and I'm all about easy dinners! I served this along side black beans and a garden salad and it was a healthy and delicious dinner!


Slow Cooker Beef Fajita Bowls
Serves 4
WW PP=10
Cal 382, Carbs 39, Fat 13, Fiber 2, Protein 26.7

Ingredients
1.5 lbs boneless chuck roast
2 tbsp. fajita seasoning
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
4 cups cooked brown rice
additional toppings of your choice (I used shredded cheese and tomatoes)

Add roast to the slow cooker. Sprinkle fajita seasoning evenly over the meat. Top with remaining ingredients except for rice. Cover and cook on low for 7-8 hours or until meat is tender. Spoon fajita mixture over rice and top with cheese or any other toppings of your choice. Enjoy!
