I love a good pasta dish and this one is another favorite of ours. What's even better is that the Crock Pot does all the work for you. That is my kind of meal!
Crock Pot Tortellini Rustica
Cal 381, Carbs 40.6, Fat 16.5, Fiber 4, Protein 16.6
6 cups tortellini refrigerated or frozen (I used Buttoni-but if you use frozen just increase the cooking time)
1/4 cup water
1/2 cup pesto sauce
1 cup chopped cherry tomatoes
2 garlic cloves, minced
2 cups spinach
1/2 shredded mozzarella cheese
Add all ingredients except for cheese to the bottom of your crock pot. Cover and cook on low for 3 hours. During the last 10 minutes sprinkle cheese over the top. Garnish with chopped basil if desired. Enjoy!
