Slow Cooker Chicken Fajita Soup



I hope everyone had a great Easter. We did and the weekend went by way too quickly! Even though it is April 1st it is windy and cold around here. I'm still un patiently waiting for Spring to arrive in Chicago. In the meantime, I'm still making soup. I'm a sucker for any soup made in the Slow Cooker so when I saw this recipe in Taste of Home I knew I had to make it. It had all the flavors of fajitas but in a tasty soup!


Slow Cooker Chicken Fajita Soup

Makes 10 cups
WW PP=2-per cup
Cal 68, Fat 0g, Carbs 7.7, Fiber 0.5g, Protein 8.5g

Ingredients
10 oz chicken tenderloins
Salt and pepper, to taste
1 yellow onion, diced
2 cloves garlic, minced
1/2 jalapeno, minced
1 small red bell pepper, cut into strips
1 small green red bell pepper, cut into strips
2 (15 ounce) cans petite diced tomatoes
1 cup fat free black beans
6 cups fat free chicken broth
1 teaspoon ground cumin
1 1/2 teaspoons chili powder
1/2 teaspoon garlic powder
Juice of 1 lime
Sour Cream, Cheese, Tortilla Strips, Green Onions for garnish

Place all ingredients into your slow cooker. Cook on low for 7-8 hours. Remove chicken and shred. Return to slow cooker, stir and ladel into bowls. Serve with additional toppings of your choice! Enjoy!
