Slow Cooker Salsa Con Queso Chicken Tacos with Cheesy Rice



Wow. That title was a mouthful. This is a great recipe for busy nights when you don't feel like spending the evening cooking. The flavor combinations are wonderful and this dish goes great with my Cheesy Rice. Plus, I pretty much love any recipe that can be made in the slow cooker!

Slow Cooker Salsa Con Queso Chicken Tacos with Cheesy Rice
Serving Size 8 Tacos
WW PP Per Taco 3
Cal 124, Carbs 11.1g, Fat 5.2g, Fiber 1g, Protein 8.7g

Ingredients
8 hard shell tacos
2-3 boneless skinless chicken breasts
1/2 envelope taco seasoning
1/2 jar salsa con queso ( I used Archer Farms)
1/4 cup salsa
Lettuce, Tomato, Sour Cream for toppings if desired

Add all ingredients except taco shells and toppings into a sprayed slow cooker. Cook on low 4 hours. Shred chicken and place in taco shells. Top with additional ingredients of your choice. Enjoy!

For the Chipotle Cheesy Rice
2/3 Cup=5 ww pp
Cal 160, Carbs 37, Fat 3g, Fiber 2g, Protein 5g

1 cup cooked hot rice ( I used Minute Brown Rice)
2 laughing cow chipotle cheese wedges

In a small bowl, stir the cheese into the hot rice until well combined. Serve immediately. Enjoy!
