Cheddar Stuffed BBQ Mini Meatloaves





I love how versatile meatloaf is. I've made quite a few variations in my years of cooking but I've never made it stuffed with cheese. All I can say is that I've been really missing out! These mini meatloaves were fantastic! A great kid friendly recipe too! Who doesn't love ooey gooey cheesy goodness? You will have to make them for yourselves and find out how wonderful they are!

Cheddar Stuffed BBQ Mini Meatloaves

Ingredients
1 pound lean ground beef or turkey
3/4 cup dry breadcrumbs (I like Panko)
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 tablespoon worcestershire sauce
1/4 cup BBQ sauce, plus additional for topping
6 ounces cheddar cheese, cubed

In a large bowl, combine all but cheese and mix well. Fill greased mini meatloaf pans with meat mixture, and place a cube of cheese in the center of each meatloaf. Completely cover with a bit more of the meatloaf mixture. Glaze with BBQ sauce.

Bake at 350F for about 25-30 minutes, or until done. Remove from pan, cool slightly, and serve with ketchup or BBQ sauce if desired. Enjoy!

  4. I made these for dinner last night and they were definitely a crowd pleaser! I don't have mini-meatloaf pans so instead I baked them in a muffin tin (I got 9 mini-meatloaves that way). I'm assuming you probably got 6 with your mini-meatloaf pans? I assumed that the 6oz of cheese was supposed to be cut into 1oz cubes, which ended up being a little big since my loaves were smaller so I ended up with 1/2 oz cube in each loaf. Not that more cheese isn't tasty, but I was afraid I'd just end up with cheese bubbling out everywhere :)

    So easy to put together and tasty and even my 2 1/2-year-old who isn't a big meat eater loved them. I will definitely be making these again. Thanks so much for the recipe!
