Smokey Ham and Swiss Panini with Homemade Baked Chips




I love panini sandwiches. They are one of my favorite comfort food meals. For a little variety, I decided to make homemade potato chips but instead of frying them I decide to bake them. They turned out great and were full of flavor and were the perfect accompaniment to my Panini.


Smokey Ham and Swiss Panini with Homemade Baked Chips

For the Panini Sandwich
Ingredients
8 (1/2-inch) thick slices hearty bread ( I used Italian)
1/2 cup whole-grain mustard
8 Slices Swiss Cheese
8 slices Ham of your choice ( I used a smoked pub ham from the deli)
Preheat your panini press. Spread each bread slice with 1 tablespoon mustard. Arrange two slices of cheese on each of 4 bread slices and top with two slices of ham. Cover with the remaining 4 bread slices. Grill in the panini press until the cheese has melted and the tops are golden and crispy, about 5 to 6 minutes. (A griddle pan will work well if you don't have a panini press)
 
For the Baked Potato Chips
 
Ingredients
2 medium russet potatoes, scrubbed and sliced 1/8 inch thick
1-2 tablespoons extra-virgin olive oil
1/2 teaspoon coarse salt ( I used Kosher)
 
Preheat oven to 400 degrees, with racks in center and lower positions. Slice potatoes and put them in a bowl of water. Soak for 10 minutes and pat potatoes dry. Divide potatoes between 2 rimmed baking sheets. Drizzle with oil, toss, and spread them in a single layer on sheets. Bake, flipping once, until centers are soft and edges are crisp, about 25 minutes. Sprinkle liberally with salt. Enjoy!
