Slow Cooker Honey Chipotle Lime Chicken



That title was a mouthful. Anyway, I am obsessed with my crock pot lately (especially cooking chicken in it) Today I was in the mood for something spicy and since I had Chipotle Peppers in the pantry I decided on a Honey, Chipotle, Lime Sauce to serve over chicken. The sweetness of the honey and tang of the lime really went well with the spicy and smoky peppers. It was a great flavor combination!

Slow Cooker Honey Chipotle Lime Chicken

Ingredients
1lb Boneless Skinless Chicken Thighs (Chicken breasts will work too)
4 Chipotle Peppers, Chopped
2 Tsp of the Adobe Sauce from the Peppers
1/2 Cup Honey
1 Tsp Garlic Powder
4 Tbsp Lime Juice
1 Tbsp Olive Oil

In a small bowl combine all ingredients except the Chicken. Place chicken in slow cooker and pour sauce over it. Cook on low 4-5 hours. Serve over rice. (I also used a dab of sour cream on mine and it was delicious!) Enjoy!
