These delicious shortbread cookies were one of the easiest cookies I've ever made. And I'm all about easy! They had a subtle lemon taste which I really enjoyed. This is the perfect cookie to serve at a brunch or shower. I can't wait to make these again soon!
Lemon Meltaway Cookies
1 1/4 cups all-purpose flour
3/4 cup butter, softened1/2 cup cornstarch
1/3 cup powdered sugar
1 tablespoon lemon juice
1 teaspoon freshly grated lemon zest
For the Topping
1/2 Cup Granulated Sugar
Heat oven to 350 degrees.
Combine all cookie ingredients in large bowl. Beat at low speed, scraping bowl often, until well mixed. Take dough and roll into 1 inch balls and place two inches apart on ungreased cookie sheets. Take the bottom of a glass that has been dipped in water and press each ball of dough until it forms a small cookie.
Bake for 8 to 12 minutes or until set. (Cookies will not brown.) Cool completely. Once cooled roll cookie in granulated sugar. Enjoy!
