Creamy BBQ Pork Flautas


One thing I love about making pulled pork is that we almost always have leftovers to use up. Last night's dinner was no exception. I normally would make pulled pork nachos but I wanted to make something different while still sticking with Mexican food. I've never made Flautas before but I wanted to give it a try. I baked mine instead of frying them but next time I would cook them just a touch less ( mine were a little too brown) but they were still delicious!

Creamy BBQ Pork Flautas
Ingredients
2 – 3 cups Pulled Pork
3 oz cream cheese
1 can chopped green Chiles
1 cup shredded cheddar cheese
1 Cup BBQ Sauce (3/4 for filling and the other 1/4 for drizzle)
8 flour tortillas
Sour Cream or Ranch For Dipping

Preheat oven to 425 degrees.Spray a baking sheet with non stick spray.Microwave cream cheese for about 30 seconds until soft. In a large bowl combine pork, cream cheese, green chiles, 1/2 cup bbq sauce, and shredded cheese. Mix well. Take one tortilla and place about 3 tablespoons of pork mixture on the lower half of the tortilla. Roll the tortilla up as tight as you can. Place Flautas on baking pan with the seam side down. Lightly spray the tops of the flautas with non stick spray and sprinkle with salt.

Bake for 15-20 minutes, until they are crispy and the ends turn golden brown. Drizzle with 1/4 cup bbq sauce. Serve alongside Sour Cream or Ranch.
