Macaroni and Cheese is by far my favorite comfort food but I am always looking for different versions of this classic dish. This chipotle mac and cheese was a great twist. It was really creamy and smoky with a touch of heat. I will definitely make this again!
Chipotle Macaroni and Cheese
8 ounces elbow or corkscrew pasta
2 cup shredded cheese ( I used sharp cheddar)
1 adobe pepper chopped, along with 2 tsp of sauce ( you can of course adjust this to your liking)
1 cup heavy cream or half and half (you can also use milk if you want a lighter version)
2 tablespoons butter
In a large sauce pan bring pasta to a rolling boil. Add macaroni and cook 7-8 minutes or until al dente. Meanwhile, in a large saucepan melt butter, then add chiptole pepper and sauce, cook 1 minute. Add cream and cook until mixture is thickened and bubbly. Slowly stir in cheese. Add pasta to cheese mixture and evenly coat. Serve immediately. Enjoy!
