Bacon and Blue Cheese Mini Meatloaves



I love blue cheese. All types of it. One of my favorite hamburgers is a blue cheese and bacon burger. I figure if it works in a burger, why not in a meatloaf?

Bacon and Blue Cheese Mini Meatloaves
Ingredients
1 cup breadcrumbs
1/4 cup crumbled blue cheese
1 cup crumbled cooked bacon (bacon bits will work too)
1 teaspoon garlic powder
1 pound ground beef
1
egg (slightly beaten)
salt and pepper to taste


Preheat oven to 350 degrees. Grease a  mini loaf pan and set aside.
In a large bowl, combine 1 cup bread crumbs and 1/4 cup crumbled blue cheese. Add ground beef, egg, bacon, garlic powder, salt and pepper. Blend to incorporate all the ingredients evenly throughout.



Distribute mixture evenly into loaf pan. (Mine made 6 meatloaves) Bake meatloaves for 40-45 minutes.  Allow to cool slightly and serve.
